Delicious!!
I made this pie filling with the 1/3 C water, 3/4 C sugar, 3 T corn starch, 1/2 t vanilla, 2 1/2 C sliced berries, 1T lemon juice and 1T butter. Once mixture was thick, I added 2 1/2 C of sliced strawberries, stirred both together to coat, put in ready made pecan pie crust & refrigerated.
I make my blueberry pie this same way, too, but add a dash of cinnamon to the cooked mixture.

Everyone loves this pie. I even use the filling for strawberry shortcake, I just don’t let it get as thick.

I use a graham Cracker Crust and line the bottom and sides with about a 1/4″ layer of softened whipped strawberry cream cheese. It is really tasty and serves as a moisture barrier between the filling and the Crust. Your comment about cream cheese triggered my memory. 😊

The amount of strawberries required was a little confusing to me the first time I made it I only had 3-3 1/2 cups of strawberries altogether and I mashed up 2 cups per the instructions then did not have enough to slice and put in. It was still really good and it set up as it should. But the second time I used 2 cups mashed and about 3 cups sliced.

It’s such a simple recipe for delicious fresh strawberry pie.

Since it’s not baked you could bake a top crust to set on top if you want.
