Best Lemon Bread Recipe

This lemon bread is a quick bread recipe, meaning it is bread made without yeast. It’s not quite bread, but not quite cake – somewhere perfectly in the middle! With a super moist texture, it has a perfect lemon flavor throughout every bite! There are lemon zest and lemon extract and there is a simple lemon glaze!

One of the things I love the most is lemon! I can never get enough lemon flavors in dessert or breakfast foods. Lemon muffins, lemon pie, lemon cookies…you name it I LOVE IT and so do you all! When you feel like lemon loaf but you want it for breakfast, it’s time to make my EASY Lemon Bread recipe.

Lemon Bread Ingredients

  • Flour: I always use all-purpose flour. Be sure to measure it correctly!
  • Baking Powder: This helps the bread rise.
  • Evaporated Milk: Be sure to buy evaporated, not sweetened condensed. It comes in a can in the baking aisle. It adds a richer flavor and some fat to the bread, making it nice and moist.
  • Oil: Vegetable oil or canola oil
  • Lemon Zest: This is where all the flavor is! Don’t skip it. Learn how to zest a lemon! A tablespoon of grated lemon adds so much flavor.
  • Lemon Extract: Always buy PURE extracts. The lemon extract pumps up the lemon flavor of this lemon bread recipe.
  • Powdered Sugar + Lemon Juice: You need these for the glaze. Be sure to use fresh lemon juice!

How to make Lemon Bread

2. Whisk together evaporated milk, lemon zest, lemon extract, oil, and eggs. Add the wet ingredients to the dry ingredients in a large bowl. Stir until combined.

3. Add to an 8×4-inch loaf pan. Bake until a toothpick comes out with just a few crumbs. Cool on a wire rack.

  • 1 ½ cups (186g) all purpose flour
  • ¾ cup (150g) granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 large egs
  • cup (79ml) oil

  • 1 teaspoon pure lemon extract optional
  • Zest of one large or two small lemons
  • ½ cup (57g) powdered sugar

Instructions

  • Preheat oven to 350°F. Spray an 8.5” by 4.5” loaf pan with nonstick cooking spray (use the kind with flour if you have it). You can also use an 8”x4” loaf pan.
  • Whisk flour, sugar, baking powder, and salt in a large bowl.
  • Place eggs, oil, evaporated milk, extract, and zest in a large measuring cup or small bowl and whisk. (The extract is optional but gives that telltale lemon flavor.) Stir the wet ingredients into the dry ingredients and stir just until the batter forms.
  • Pour into prepared pan and bake for 35-45 minutes, or until a toothpick comes out mostly clean just slightly to one side of center. Cool before frosting.
  • Whisk powdered sugar and lemon juice (1 tablespoon at a time) until desired consistency, drizzle over the bread. The frosting is optional and makes it more sweet, but the bread is good without it as well.

Perfect Pretzels from Scratch

I absolutely LOVE soft pretzels. Whenever I am out and see a pretzel shop I can’t resist getting one. This soft pretzel recipe takes those amazing mall soft pretzels right into your own home. Making pretzels from scratch is so fun and they always turn out so delicious – plus they’re easier than you think to make! These are similar to my soft pretzel bites, but they’re FROM SCRATCH!

The thought of making homemade soft pretzels can be overwhelming because there are a lot of steps, but I promise it is much easier than it looks! The trick to getting that brown color and chewy texture is the baking soda bath – don’t skip it. You’re going to love this recipe!

Ingredients Needed

  • Instant Yeast: Using Instant yeast (often called Rapid Rise) is the easiest and fastest way to make these pretzels. Be sure to take note of what kind of yeast you have – active dry yeast requires different steps.
  • Granulated Sugar: Just a little bit helps activate the yeast.
  • Salt: There is normal table salt in the dough, but you’ll want coarse salt or pretzel salt for topping.
  • Baking Soda: Boiling pretzel dough in a baking soda solution is the key to the chewy texture and that signature pretzel taste.

How to make Soft Pretzels (step-by-step instructions)

1. Place water and butter in a microwave safe measuring cup. Heat in 30 second increments on high power until it reaches 120-130°F (the butter may not totally melt).

2. Mix dry ingredients, starting with just 2 cups flour, in a large mixing bowl or the bowl of a stand mixer. Whisk to combine, then add the liquid.

3. Mix until the dough comes together, adding more flour as you go. The dough will come to a ball in the center of the mixer.

4. Knead the dough a few times, up to 2 minutes, on a lightly floured surface, until the dough comes together in a ball and springs back when pressed with 2 fingers. At this point, let the dough rest 10 minutes.

How to Form Soft Pretzels

5. Divide the dough into 12 equal pieces. Roll each into a long rope, at least 14 inches long.

6. Fold the dough into a U shape and cross over 2 ends of the U.

7. Twist the ends of the U.

8. Fold the top twist down and stick to the bottom loop, forming the pretzel shape.

How to Boil and Bake Soft Pretzels

Bring a large pot of water to boil with the baking soda. Boil each pretzel in the water bath for no more than 20 seconds each. Remove with a slotted spoon to a prepared baking sheets (covered with parchment paper or silicone baking mats). Sprinkle with coarse sea salt or kosher salt and bake until golden brown.

Lye Bath vs Baking Soda

Traditionally, pretzels are cooked in a lye bath instead of a baking soda bath. Purists will say it’s not really a soft pretzel if you don’t use lye, however lye is harder to get and more finicky to use.

If you were to use a lye bath you would notice that the pretzels would turn out a deeper golden brown, more like German pretzels. Using baking soda will always return a lighter color. If you want to use lye, be sure to carefully do so, and create the correct ratio of water to lye.

I am someone who likes easy recipes, so having to order something I don’t really know how to use isn’t worth it for me and baking soda pretzels taste just as good, in my opinion. However if you do want a deeper brown color without lye, you can brush the dough with egg wash before baking and the color will be darker brown.

Expert Tips

  • Don’t crowd the pretzels in the baking soda water. Depending on the size of your pot, only boil 3-4 at a time.
  • Don’t boil them longer than 20 seconds or the baking soda taste becomes too much.
  • You can omit the salt on top if you don’t like salted pretzels.

You can freeze these pretzels! Freeze them in an airtight container for up to 3 months – be sure to wrap them tightly in plastic wrap or in an airtight container.

Can I use active dry yeast?

The recipe as written is for instant yeast. To use active dry yeast you’ll use the same ingredients, but instead of mixing the dry together first, you’ll need to proof the yeast. Heat water to between 100-110° and add your yeast and sugar to it. Let sit until bubbly and frothy. Then add that with melted butter and salt and flour to your stand mixer and continue as directed.

These homemade pretzels taste just like the ones you would get at the mall! They are soft and fluffy with the perfect pretzel taste.

Ingredients

  • 4 cups (492g) all-purpose flour (you'll start with 2 cups and add more when mixing)
  • 1 envelope 2 ¼ teaspoons Instant Yeast
  • 1 tablespoon (13g) granulated sugar
  • 1 ½ teaspoons salt
  • 1 ⅓ cups (316ml) water
  • 2 tablespoons (28g) unsalted butter, softened
  • 10 cups water
  • ¾ cup baking soda
  • Sea Salt or Coarse Salt for topping

Instructions

  • Place 2 cups (248g) flour, yeast, sugar, and salt in the bowl of a stand mixer fitted with the paddle attachment. Whisk to combine.
  • Place water and butter in a microwave safe measuring cup. Heat in 30 second increments on high power until it reaches 120-130°F (the butter may not totally melt).
  • Add warm water to the yeast mixture and run the mixer on low to combine.
  • Add additional 2 cups (248g) flour and run the mixer until dough starts to come together, then switch to the dough hook and run the mixer on medium- low speed until the dough comes together in a ball in the center of the mixer, about 2-4 minutes. It will be slightly sticky and may leave traces on the sides of the bowl.
  • Lightly flour a work surface and add the dough from the bowl. Sprinkle the top with a bit of flour and knead the dough a few times, up to 2 minutes, adding more flour as needed so it doesn’t stick to the board, until the dough comes together in a cohesive ball. You know your dough is done kneading when it bounces back with 2 fingers when pressed.
  • Cover and allow the dough to rest for 10 minutes. Line two baking sheets with parchment paper or silicone baking mats. Preheat oven to 400°F.
  • Meanwhile, bring the water and baking soda to a boil in a large pot. Cover and keep it on a high simmer/low boil until you’re ready to boil the pretzels.
  • After the dough has rested for 10 minutes, divide the dough into 12 equal pieces (approximately 70g each, but this will vary).Roll each piece of dough into a long rope that is at least 14-inches long (can be longer if you wish).
  • To create the pretzel shape: fold the rope into a U shape. Twist the two ends of the U and fold them back down to meet the bottom of the U. Repeat with remaining dough. Place each on prepared cookie sheets.
  • Make sure the water is boiling and place 3-4 pretzels in the water at a time (depending on size of your pot; you don’t want to crowd them). Boil no longer than 20 seconds each and remove with a slotted spoon, draining excess water, and place back on cookie sheet. Sprinkle with coarse salt. Repeat until all pretzels have been boiled.
  • Bake pretzels for 10-15 minutes, or until dark golden brown on top. Be sure to check them halfway through baking to see if you need to rotate your pans.
  • Cool slightly before eating. Serve warm or room temperature. Store in an airtight container for up to 2 days or freeze for up to one month.

Notes

  • If you want, you can skip salting before baking. Enjoy unsalted, or brush
    with melted butter and top with coarse salt after baking (like they do at
    the pretzel shop).
  •  You can also make the dough through the resting step or the twisted
    step ahead of time, up to 24 hours in the refrigerator or one month in the
    freezer. I don’t recommend boiling then freezing.
  • Thaw frozen dough or baked pretzels at room temperature.
  • To reheat thawed baked pretzels, heat in the air fryer or microwave.

Blueberry Lemon Monkey Bread – the perfect combo!

Monkey bread is one of my favorite recipes to make! It is also my families favorite. It is a perfect sweet brunch and breakfast recipe. We make monkey bread every year for Christmas. I’ve made it in a slow-cooker and with frozen dinner rolls. For this version I made  it blueberry lemon, which is a super popular flavor combination, especially in the summer.

Lemon and blueberry compliment each other so well and this pull-apart bread has an amazing lemon glaze! This recipe is a must make if you are looking for a sweet brunch recipe for Easter, Mother’s Day, Christmas or any day!

Ingredients Needed

  • Pillsbury Grands! Biscuits: You can use whatever brand you prefer. Grands! are a little larger than other brands so pay attention to what you buy.
  • Lemon Zest: Lemon zest is so important for flavor.
  • Blueberries: Make sure to wash and dry them before adding them in. You can use thawed frozen berries as well.
  • Unsalted Butter: You can use salted butter if that’s all you have.
  • Granulated Sugar and Brown Sugar: One for the biscuits and one for the butter mixture.
  • Powdered Sugar and Lemon Juice: For the amazing glaze.

How do you make Easy Monkey Bread?

  • Slice biscuits into 4 pieces each. Place them in a large gallon size ziploc bag. Add granulated sugar and lemon zest. Seal the bag and shake to coat.
  • Place half the biscuit pieces in the prepared pan. Top with half the blueberries, repeat for remaining biscuits and blueberries.
  • Stir together melted butter and brown sugar. Pour over the biscuits in pan.
  • Place bundt pan on a cookie sheet. Bake until the biscuits are golden and cooked through. Let sit 10 minutes, then invert onto serving plate.
  • Make the glaze: whisk powdered sugar and lemon juice in a small bowl. Drizzle over monkey bread. Serve warm.

Now cornbread from scratch is delicious but sometimes a little semi-homemade help is needed to get dinner (or snack or breakfast) on the table and no one will judge you for it.

Ingredients

  • 1 15 ounce box Krusteaz Cornbread Mix (see note)
  • ¼ cup (50g) packed brown sugar
  • cup (158ml) milk
  • cup (79ml) vegetable oil
  • 1 large egg
  • 6 ounces fresh blueberries

Instructions

  • Preheat oven to 375°F. Spray an 8-inch square baking pan with nonstick cooking spray.
  • Whisk cornbread mix and brown sugar in a large bowl. Mix in milk, oil, and egg. Fold in blueberries.
  • Pour into prepared pan. Bake 25-30 minutes or until a toothpick comes out clean from the center of the cornbread.
  • 12 standard size muffins: Bake approximately 14-16 minutes, or until a toothpick comes out clean.
  • 8-inch Cast iron skillet: Bake at 400°F for about 20-25 minutes.

  • If using frozen berries, be sure to thaw and drain them well.
  • If using canned berries, drain very well.
  • If you’re not using Krusteaz cornbread mix, use any brand you like, but make them as directed, adding the 1/4 cup brown sugar and 6 ounces blueberries (omit other ingredients and follow box directions).

I looooove banana bread. It’s so good for breakfast, brunch, and snacks. I’ve been known to eat way more than my fair share whenever it’s on my counter (or in my freezer). It’s especially good for a potluck or brunch because you a make it ahead of time, then slice it and serve it. Level up your classic banana bread by adding strawberries! This will be your go-to bread from now on!

The SECRET to Banana Strawberry Bread

Okay, okay. You want to know the SECRET to this banana bread? Here it is: It’s made with…pancake mix!

PANCAKE MIX! Yes, that’s right. This bread starts with Krusteaz Pancake Mix (the kind you just normally would add water to to make pancakes). Using pancake mix makes it so much simpler! You can use any pancake mix that only needs water added. You don’t need to add any extra baking soda or baking powder or all purpose flour!

Other Ingredients Needed

  • Banana: You’ll need one overripe banana. Make sure it’s got lots of brown spots – that makes it extra sweet.
  • Eggs: 2 large eggs help make this moist and give structure to the bread
  • Oil: Keeps the bread moist
  • Water: Helps it blend up nice and smooth. You could also use milk.
  • Sugar: Since pancakes aren’t normally sweet, you need to add some extra granulated sugar.
  • Strawberries: Fresh chopped berries work best
  • For the Glaze: if you use the glaze, you’ll need some powdered sugar and cream or milk. I also use Strawberry Extract to pump up the flavor, but you can use vanilla if you don’t have strawberry.

How to Make This One Bowl Banana Bread

  • Add banana to a large bowl. Mash with a fork or potato masher.
  • Add eggs, water, 1 teaspoon vanilla, and oil to mashed banana. Stir.
  • Add dry ingredients. Stir to combine.
  • Gently fold in strawberries. Pour batter into prepared pan.
  • Bake for 40-50 minutes or until a toothpick comes out clean or with just a few crumbs right from the center of the loaf. Cool 15-20 minutes before removing from pan. Cool completely before frosting.
  • Make the glaze and frost bread. Frosting won’t set completely but will get a crust on the outside.

Expert Tips

  • Fresh vs Frozen Strawberries: I don’t recommend using frozen berries because they will have too much water and weigh down the bread.
  • You can skip making the glaze if you prefer but it adds some sweetness to the recipe.
  • This recipe was written for a 9×5-inch loaf pan. You can use one that is a bit larger, or you can make two smaller loaves in two 8×4-inch pans (they won’t rise as high).
  • Store bread covered for up to 3 days on the counter or freeze unfrosted bread for up to 3 months.

  • This recipe is written for an 9×5-inch pan. You can also bake it in an 8×4-inch pan.

Banana Blueberry Bread Recipe

This Blueberry Banana Bread recipe is the softest and moistest bread and is also incredibly easy to make! It’s full of fresh berries (or frozen) and tons of banana flavor. I created this from my favorite banana bread recipe – my moms – and it’s EPIC.

I also put cinnamon sugar on the crust of this recipe, which is the best topping for any bread recipe. The blueberry and cinnamon sugar will always be a favorite pairing of mine that you need to try! If you have any overripe ugly brown bananas that need to be used…this is your recipe!

Ingredients Needed

  • Bananas: Be sure to use ripe bananas – the more spotted the better! Bananas get sweeter as they get spotted and brown – so they’re perfect for baking.
  • Blueberries: I prefer fresh berries in this recipe, but you can also use thawed frozen blueberries.
  • Vinegar: Mixes with the milk to create sour milk, which helps the bread rise – the acid activates the baking soda.
  • Milk: You can use any kind of milk or nondairy milk.

How to make The Best Banana Bread

  • Preheat oven to 375°F and prepare your pan.
  • Whisk together the all purpose flour with salt and baking soda in a large bowl. Set aside flour mixture. Mix milk and vinegar; set aside.
  • Cream butter and sugar until fluffy, then mix in mashed bananas, eggs, and vanilla, then add in dry ingredients and milk mixture.
  • Fold in 2 cups blueberries. Pour into pans, sprinkle with cinnamon sugar, and bake until a cake tester or toothpick comes out clean – the loaf will be golden brown.

Expert Tips

  • Be sure to read the FULL recipe and tips before starting!
  • If you are using frozen blueberries, be sure to thaw them first and drain them well.
  • I like to sugar my pan – this is like greasing and flouring (where you add 1-2 tablespoons of flour to a crisco or butter greased pan) but instead of flour you use granulated sugar. This is optional but adds amazing flavor.
  • You can use a stand mixer or hand mixer to make this recipe.
  • This will also make 3 mini loaves – you can use 3 mini loaf pans in place of one large pan.
  • Store banana bread wrapped in plastic wrap on the counter for up to 3 days or freeze it for up to 3 months.

Yes! You can freeze this bread recipe in an airtight container for up to 3 months.

Why is my banana bread not done in the middle?

Quick breads take a long time to bake, and that center crack in the middle is the last to finish. If your bread isn’t done all the way, the center might stay gooey, or the bread will fall as it’s cooling. If you notice the bread getting too brown, tent it with foil or reduce the oven temperature to 350°F. Bread is done when a toothpick comes out clean from the center of the crack/very center of the bread.

Bread:

  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 7 tablespoons (105ml) milk (see note)
  • 1 teaspoon white vinegar (see note)
  • 1 teaspoon vanilla extract
  • ¾ cup (150g)granulated sugar
  • ½ cup (113g) unsalted butter , softened
  • 2 medium bananas (brown spotted, overripe)
  • 2 large eggs
  • 2 cups fresh or frozen blueberries (be sure to thaw and drain frozen berries)

Topping:

  • ¼ cup (50g) granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  • Preheat oven to 375°F. Grease a 9x5x3” loaf pan with butter and coat it with sugar. (You do this like you would grease and flour a pan. Grease it first, then add about 2 tablespoons sugar to the pan and move the pan side to side until the bottom and sides are coated with sugar. Do NOT substitute cooking spray for the butter. You can skip the sugaring and just use cooking spray, if you wish.)
  • Whisk flour, baking soda, and salt in a medium or large bowl. Set aside.
  • Place milk, vinegar, and vanilla extract in a measuring cup and set aside.
  • Cream butter and ¾ cup sugar with a hand mixer or stand mixer. Mash bananas with a fork and add to the butter mixture along with the eggs. Mix until chunky.
  • Add the dry ingredients into the banana mixture along with the milk mixture. Mix until just combined (batter will be slightly lumpy). Fold in blueberries.
  • Pour batter into prepared pan.
  • Combine 1/4 cup sugar and cinnamon in a small bowl. Sprinkle evenly over the top of the batter.
  • Bake for 45-50 minutes until a toothpick comes out clean from the center of the bread. The edges will be a dark brown and there will be a nice crack down the center.
  • Cool completely before removing loaf from pan, but you can cut slices from the pan after it’s cooled for about 15-20 minutes.

Notes

  • My original recipe (and the video) shows blending the bananas, eggs, baking soda, milk, and vinegar using a blender. You can definitely do this, but I’ve started making my banana breads by just mashing the banana by hand and mixing everything in because it means less dishes. 
  • The top of the bread will get deep golden, but if you notice the bread browning too fast, you can tent the pan with foil or reduce oven temperature to 350°F. This happens in various ovens, depending on how the oven cooks.
  • You can use fresh or frozen berries, but make sure frozen berries are thawed and drained.
  • Basically this recipe calls for “sour milk” which I’ve separated as vinegar and milk. It’s essentially buttermilk – the acid in the vinegar activates the baking soda for a moist bread. You can use 7 tablespoons of buttermilk if you have it and omit the milk and vinegar. Don’t have vinegar? Use lemon juice instead. You can also use ANY kind of milk – dairy or nondairy)
  • Pan sizes: a 9×5 pan is the best to use, although an 8×4 will work, but you’ll want to watch it to make sure it doesn’t get too brown on top before it’s done in the middle. You can also make this in 3 mini loaf pans or as 12 muffins.

This Baked Brie is a perfect appetizer all year long, but especially at the holidays. This version is mixed with apples and pecans, brown sugar and wrapped in pastry! It is the best holiday appetizer that is super easy to make – it’s got tons of melty cheese in every bite!

Easy Baked Brie

I discovered brie cheese at a young age and ever since then, I have been obsessed. I love making things with this soft cheese because it is always a hit at any get together.

The traditional baked brie recipe is wrapped in puff pastry and topped with brown sugar, raspberry jam, or honey, then baked. I switched up the classic recipe to bring in flavors of apples, and pecans and I wrapped it in crescent roll dough!

This brie is baked until melty and gooey; it is the best consistency to dip crackers, fruit, sliced bread, or to just eat with a fork! This is a fast and easy recipe perfect for Christmas, Thanksgiving, or any holiday gathering.

Ingredients Needed

  • Apples: Granny Smith or Fuji/Gala are the best, but use what you love.
  • Brown Sugar: We’re going to use it to cook the apples and also to sprinkle on the wedge of brie.
  • Heavy Whipping Cream: When paired with pecans and brown sugar this makes a pecan pie-like filling.
  • Brie: This recipe is written for a round of cheese. I like to remove the rind with a butter knife.
  • Crescent Rolls: The entire mixture is wrapped in the dough and bakes until it’s all melty and perfect.

How to make Apple Baked Brie

  • Dice apples. Cook apples in melted butter with brown sugar and cinnamon over medium-low heat until softened, about 10 minutes.
  • Stir chopped pecans, brown sugar, heavy whipping cream, and vanilla in a small bowl.
  • Unwrap brie. Use a butter knife to scrape off as much of the white part into the garbage as you can without cutting the brie.
  • Unroll Crescent Rolls into a flat sheet. Divide into two squares and press all the seams together. Place one rectangle in the middle of your prepared baking sheet. Place the brie wheel in the center of the rectangle. Layer on the apples and pecan pie mixture then top with the other square of dough, cutting off excess dough if there is any.
  • Poke a few holes with a fork in the top of the crescent rolls for steam to escape, or just make sure some of the seams have holes in them. You can brush with egg wash to make it nice and golden. Bake until the crescent rolls are browned. Serve immediately with crackers, apple slices, sliced baguette, or a fork.

Do you take the rind off the brie before baking?

I like to scrape the edges of the rind off with a butter knife. No need to cut it off. You can leave it on if you don’t care about it.

Ingredients

  • 1 medium granny smith or fuji/gala apple
  • 1 tablespoon (14g) unsalted butter
  • ¼ cup (50g) + 1 tablespoon (12g) packed brown sugar , divided
  • ½ teaspoon cinnamon
  • 1 cup (120g) chopped pecans
  • 1 tablespoon (15ml) heavy whipping cream
  • ½ teaspoon vanilla
  • 1 8 ounce wheel Brie
  • 1 8-count can Crescent Rolls

Instructions

  • Preheat oven to 375°F. Line a baking sheet with parchment paper or a silpat baking mat.
  • Peel and core apple, then dice into bite sized pieces. Melt butter in a medium skillet. Add apple pieces, 1 tablespoon brown sugar, and cinnamon. Cook apples over medium-low heat until softened, about 10 minutes. Remove from heat and let sit until you’re ready to assemble the brie.
  • Stir chopped pecans, ¼ cup brown sugar, heavy whipping cream, and vanilla in a small bowl.
  • Unwrap brie. Use a butter knife to scrape off as much of the white part into the garbage as you can without cutting the brie.
  • Unroll Crescent Rolls into a flat sheet. Divide into two squares (4 triangles each) and press all the seams together. Place one rectangle in the middle of your prepared baking sheet. Place the brie wheel in the center of the rectangle.
  • Now comes the messy part. Carefully put the apples on top of the brie, then stack the pecan mixture on top of that. Some will fall down. Fold up the corners of the bottom sheet of crescent rolls as much as you can. Place the second crescent roll rectangle on top of the pecan mixture and press to seal over the folded up bottom sheet. It will be messy and imperfect, but try to seal the edges as much as possible so the cheese doesn’t leak everywhere. (Alternately: you can do this in a round pan that fits the brie wheel. Spray the pan with nonstick cooking spray, line it with one rectangle of crescent rolls, layer the brie, apples, and pecan mixture, then top with second rectangle.)
  • Poke a few holes with a fork in the top of the crescent rolls for steam to escape, or just make sure some of the seams have holes in them. Bake for 15-20 minutes, or until the crescent rolls are browned. Serve immediately with crackers, fruit, sliced baguette, or a fork.

You may be asking: How can this yeast recipe be done so quickly? I’ll let you in on a little secret: using a lot of yeast will make them rise faster and essentially be done faster as well. These are perfect for when you need rolls, but don’t have all day to wait for them to rise!

This recipe makes 12 perfect dinner rolls that are perfectly soft. They freeze well, taste amazing, and go great with butter as a side dish for any meal.

Ingredients Needed

  • Warm Water: You’ll want to heat the water about 30 seconds in the microwave. If you have an instant read thermometer it should read between 100-110°F.
  • Active Dry Yeast: There is no substitute for this in this recipe. Make sure you’re using active dry yeast, not instant. You need 2 tablespoons, so get 3 packets or a jar.
  • All-Purpose Flour: I always use all purpose flour in my bread recipes because it’s what I have in my pantry, but bread flour will work as well.

Pull Apart Dinner Rolls

Dinner isn’t complete without some sort of bread as a side dish. Whether I’m making soup or salad for a weeknight dinner or going full out and making a special occasion meal, I’m always in the mood to make dinner rolls.

This recipe is easy enough to make as a simple side or for your holiday table:

  • Rise time is only 30 minutes
  • You can make them with or without a mixer – I’m showing you how to do it by hand!
  • The recipe makes 12 perfect pull apart rolls!

My daughter said these were the best rolls I’d ever made – and she’s an authority on dinner rolls since I make them so much!

What is a Cloverleaf Roll?

These old fashioned yeast rolls are a simple recipe that resemble pull-apart monkey bread muffins.

The recipe is a standard one for homemade rolls, but instead of just forming buns you cut the dough into 36 pieces and then drop pieces into a cupcake pan for baking.

The result is a puffy muffin-looking dinner roll with pull apart pieces that look like the leaf of a clover plant, which has three lobes.

Best Yeast for Dinner Rolls

As always, yeast matters when you’re making bread or rolls. There are different types and you need to pay attention to which one you’re using.

This recipe uses fast-acting yeast (also called RapidRise Yeast, if you’re using Fleischmann’s brand). Each brand of yeast has its own name for quick yeast so be sure to look for the fine print.

  1. You don’t have to proof the yeast to activate it. Instead, you just add the dry yeast to the dry ingredients.
  2. The first “rise” is actually just a rest period of 10 minutes, cutting off a lot of the time it takes to make anything with yeast.

Making the dinner roll dough

Start the recipe by adding the dry ingredients in a large bowl. I always start with just part of the flour to get the mixture going, then we’ll add the rest later.

For the dry ingredients you’ll need: flour, sugar, salt and one packet of Fleischmann’s® Yeast RapidRise® Yeast.

Then, prep the wet ingredients: milk, water, and butter. The wet ingredients will be added hot to the dry and that heat is what will activate the yeast.

It’s important to get your liquid to the right temperature (between 120-130°) so it’s warm enough to activate the yeast but not so hot as to kill it. You can think very warm water or use an instant read thermometer to check the temperature.

Add the wet ingredients into the dry, along with more flour, up to 2 1/4 cups, stirring until the dough comes together.

You can do this by hand, as I have, or you can use a stand mixer. Your choice!

Kneading the dough

Once the dough comes together and can’t be stirred anymore, it’s time to knead it. (Learn more about kneading techniques here.)

You’re going to knead the dough on a floured surface for about 6-8 minutes. Work the dough back and forth over itself until it forms a cohesive ball.

(It will take longer to do this by hand. If you’re using a stand mixer with the dough hook it cuts the kneading time in almost half.)

You’ll know you are done kneading when the dough forms a ball and will spring back when touched with two fingers.

This dough ball needs to rest for just 10 minutes, thanks to the magic of RapidRise® Yeast.

Forming Cloverleaf Rolls

These rolls are like monkey bread: they have little bite sized pieces of dough that form the shape.

You’ll need to cut the dough into 36 pieces. Here’s a little math help:

  • First, cut the dough into 4 pieces
  • Cut each quarter into thirds
  • Then cut each little third into thirds

Then you’ll have 36 little balls of dough, perfect for forming your Cloverleaf Rolls.

Dinner Rolls in Muffin Pans: I love that these rolls are baked in a muffin tin. It makes them so much fun! Simply spray a traditional, 12-cup cupcake pan with nonstick spray, then add 3 pieces to each one. Then cover and let the rolls rise for 30 minutes.

After 30 minutes, bake the rolls at 375°F for about 20 minutes, or until they are nice and golden brown.

Once the rolls are baked, I like to brush them with melted butter because melted butter makes everything better.

Expert Tips for Dinner Rolls

  • Be sure to pay attention to the kind of yeast you’re using. This recipe was written for rapid quick yeast – you cannot substitute active dry.
  • It’s important that your water is the right temperature. That’s why I recommend an instant read thermometer.
  • Be sure to read the entire recipe before starting.
  • You can do this by hand or in a stand mixer. The stand mixer will knead the dough for you so you don’t have to do as much by hand.

Ingredients

  • 2 to 2-¼ cups (242g-274g) all-purpose flour
  • 2 tablespoons (25g) granulated sugar
  • 1 packet Fleischmann's® RapidRise Yeast (2-1/4 tsp)
  • ½ teaspoon salt
  • ½ cup (118ml) milk whole, 2%, 1% OR skim
  • ¼ cup (59ml) water
  • 2 tablespoons (28g) unsalted butter
  • Additional Butter melted

Instructions

  • Combine ¾ cup flour, sugar, dry yeast and salt in a large mixer bowl and stir until blended.
  • Combine milk, water and butter in a small microwave-safe bowl or measuring cup. Microwave on HIGH in 15 second increments until very warm but not hot to the touch (120° to 130°F). Test the water temperature with an instant read thermometer, if you have one. Note: butter won’t melt completely.
  • Add wet ingredients to flour mixture.
  • Without a mixer: stir mixture with a wooden spoon until you can’t stir anymore, adding just enough flour (about 1 – 1 ½ cups more) so the dough will come to a ball, getting your hands in there once you can’t stir anymore.
  • If using a mixer: Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add 1/4 cup flour; beat 2 minutes at high speed. Stir in just enough of the remaining flour (1 to 1-1/4 cups) so that the dough will form into a ball.
  • Knead on lightly floured surface until smooth and elastic and springs back when lightly pressed with 2 fingers, about 6 to 8 minutes. Cover with a towel; let rest for 10 minutes.
  • Cut dough into 36 equal pieces. (Do this by cutting the dough into 12 pieces and cutting each of them into three pieces.) Roll each piece into a ball.
  • Spray a 12-cup muffin pan with nonstick cooking spray. Place three balls of dough in each muffin cavity.
  • Cover with towel; let rise in warm place until doubled in size, about 30 minutes .
  • Bake in preheated 375ºF oven for 20 minutes or until golden brown. Remove from pan carefully and brush with additional melted butter, if desired. Serve warm.

Classic Pumpkin Bread with Nuts

Quick breads are my favorite because they’re so much easier to make than yeast bread, but they taste just as good. Maybe even better! This pumpkin bread tastes like a pumpkin muffin in bread form and I couldn’t ask for anything better.

The nuts in this nut bread add so much to the recipe. I love the addition of pecans because they add so much to the flavor and they elevate the texture. If pecans aren’t your thing–that’s okay! Add any type of nut (like walnuts). It’s an easy bread recipe you’re going to love!

  • Sugar: I use a mix of granulated sugar and packed brown sugar in my pumpkin bread.
  • Vegetable Oil: I love using oil because it makes it easy to mix up and keeps the bread extra moist.
